What Is Thandai?
Thandai is a cold, sweet milk drink flavored with a blend of nuts, seeds, and spices that are deeply characteristic of North Indian cuisine:
- Almonds — raw, ground into the milk

- Fennel seeds (saunf) — gives thandai its distinctive licorice-adjacent note
- Saffron — a few strands for color and warmth

The base is whole milk, slowly cooked down until it takes on a slight golden color from the saffron and nuts. It's sweet but not cloying — the fennel and cardamom keep it from being a simple dessert drink.
